What is a SCOBY?
A SCOBY (Symbiotic Culture Of Bacteria and Yeast) is the living starter culture that makes kombucha possible. It’s a rubbery disc of beneficial bacteria and yeast that work together to turn sugar into acids, carbonation, and probiotics. No SCOBY, no kombucha!
